2 lbs ground chicken

1 cup panko breadcrumbs

½ cup grated yellow onion

2 lg eggs

¼ cup whole milk

1 tsp garlic powder

1 tsp smoked paprika

2 tbsp oil (for baking) or cooking spray

- Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together the ground chicken, breadcrumbs, onion, egg, milk, garlic powder, smoked paprika, salt, and pepper until well combined.
- Scoop about 2-3 tablespoons of the meatball mixture and roll into balls, placing them on the prepared baking sheet. Lightly brush the meatballs with oil.
- Bake for 18 to 20 minutes.
- While the meatballs are in the oven, warm the buffalo sauce in a small saucepan over low heat.
- Once cooked, transfer the meatballs to a bowl and toss with the warmed buffalo sauce until evenly coated.
