2 ea racks baby back ribs (about 5 lb total)

2 tbsp yellow mustard (optional, for helping the rub stick)

- Preheat the oven to 300°F.
- Remove the thin silver membrane from the back of the ribs, if still attached. Use a butter knife to lift an edge, then grip it with a paper towel and peel it off.
- Pat the ribs dry with paper towel. Rub or brush the mustard evenly over both sides of the ribs.
- Rub the brown sugar bbq mixture generously over both sides of the ribs, pressing to adhere.
- Wrap each rack tightly in aluminum foil and place them meat-side up on a large baking sheet.
- Bake for 2 ½ hours, or until the ribs are tender and the meat pulls away slightly from the bones.
- For a caramelized finish, carefully unwrap the ribs and place them under the broiler for 2–4 minutes, watching closely to avoid burning.
- Let the ribs rest for 10 minutes before slicing between the bones. Serve warm.
