1 lbs ground beef

2 tbsp Flavortown Burger Joint Seasoning Rub

8 sm flour tortillas (5-6 inches)

8 ea slices American cheese

1 cup shredded iceberg lettuce

½ cup dill pickle chips

2 tbsp ketchup

1 tbsp yellow mustard

- In a small bowl, whisk together the mayonnaise, ketchup, mustard, pickle juice, and Burger Joint seasoning. Refrigerate until ready to use.
- In a medium bowl, mix the ground beef with the Burger Joint seasoning. Divide into 8 equal portions (about 2 oz each).
- Lay out the tortillas and gently press one portion of seasoned beef onto the center of each tortilla. Use your hands or the bottom of a measuring cup to flatten the beef evenly across the entire tortilla surface, all the way to the edges.
- Heat a large cast iron skillet over medium-high heat. Working in batches, place the tortilla beef-side down into the hot skillet. Press firmly with a spatula for maximum contact. Cook for 2 to 3 minutes, until the beef is well-browned and starting to crisp.
- Flip the taco so the tortilla side is down. Place a slice of American cheese on top of the cooked beef. Cook for 1 to 2 minutes, until the cheese melts and the tortilla is crispy and golden brown.
- Remove from the skillet and top each with shredded lettuce, pickle slices, and a drizzle of burger sauce before serving.
